You Will Need:
1lb Peeled Shrimp (about 24)
2/3c. Fresh Orange Juice
1/2c. Fresh Lime Juice
1/2c. Fat-Free Chicken Broth
3 Minced Garlic Cloves
4tsp. Olive Oil
2tsp. Sugar
2tsp Dried Oregano
1/2c. Chopped Fresh Cilantro
{Side Note: Let the husband peel and devein shrimp under cool running water, while you are prepping everything else. Will cut prep time in half. To devein shrimp: follow the curve of the outer back and move from the top toward the tail to expose the dark vein and remove.}
To Make Mojo:
Combine Orange Juice, Lime Juice, Chicken Broth, Garlic, 3tsp of the Olive Oil, Sugar, and Oregano in a Small Sauce Pan.
(you won't need this many oranges by any means! we made fresh squeezed OJ this night as well. use about 4 or 5)
(4-6 limes-depending on size and how juicy they are)
SUGAR
Bring mixture to boil, reduce heat, and simmer for 5 minutes.
Remove from heat, stir in cilantro, and cool 5 minutes.
Reserve 1/2c of the Mojo and set aside. Pour the remainder of Mojo into a medium bowl with shrimp, tossing well to coat. Let the shrimp marinate 15 minutes.
Drain the shrimp and discard the marinade, season shrimp with salt.
Heat a large nonstick skillet over medium-high heat. Add remaining 1tsp. oilve oil and then add shrimp.
(cook until opaque, about 2-3 minutes per side)
Remove from heat and drizzle top of shrimp with the reserved Mojo Sauce.
(steamed asparagus is a wonderful side dish for this meal. we like our's a little crunchy so i let it steam for 10min. oh and the skinner asparagus is def the way to go!! )
