I know it must be hard for those who have babies/kiddo's at home to get out and be pampered, so don't you worry because coming soon I will be doing House Calls! How perfect is that? You can schedule for me to come when your kiddo's are napping! Is there a more relaxing way to spend that time while your child is sleeping? Ya, didn't think so. And to make it even more enjoyable, I will only be charging $10 for that House Call!

.:Shrimp With Cilantro Mojo:.

You Will Need:

1lb Peeled Shrimp (about 24)

2/3c. Fresh Orange Juice

1/2c. Fresh Lime Juice

1/2c. Fat-Free Chicken Broth

3 Minced Garlic Cloves

4tsp. Olive Oil

2tsp. Sugar

2tsp Dried Oregano

1/2c. Chopped Fresh Cilantro

{Side Note: Let the husband peel and devein shrimp under cool running water, while you are prepping everything else. Will cut prep time in half. To devein shrimp: follow the curve of the outer back and move from the top toward the tail to expose the dark vein and remove.}

To Make Mojo: 

Combine Orange Juice, Lime Juice, Chicken Broth, Garlic, 3tsp of the Olive Oil, Sugar, and Oregano in a Small Sauce Pan.

(you won't need this many oranges by any means! we made fresh squeezed OJ this night as well. use about 4 or 5)

(4-6 limes-depending on size and how juicy they are)

SUGAR

Bring mixture to boil, reduce heat, and simmer for 5 minutes.

Remove from heat, stir in cilantro, and cool 5 minutes.

Reserve 1/2c of the Mojo and set aside. Pour the remainder of Mojo into a medium bowl with shrimp, tossing well to coat. Let the shrimp marinate 15 minutes.

Drain the shrimp and discard the marinade, season shrimp with salt. 

Heat a large nonstick skillet over medium-high heat. Add remaining 1tsp. oilve oil and then add shrimp.

(cook until opaque, about 2-3 minutes per side)

Remove from heat and drizzle top of shrimp with the reserved Mojo Sauce. 

(steamed asparagus is a wonderful side dish for this meal. we like our's a little crunchy so i let it steam for 10min. oh and the skinner asparagus is def the way to go!! )

.365 Days of Love.

Well folks, the 27th of this month marks 1 YEAR for my baby and I! I cannot believe how fast this year has gone. Marriage is the best thing that has ever happened to me. I could not imagine marrying a more perfect man for me than Levi. He is so patient with me and loves me with everything he's got to give. We have grown so much together and he is my best friend, the best friend I have always wanted my dream man to be. He is my definition of perfect.

To celebrate our 1 year of many adventures, trials, surgeries (me), broken bones (me), moving into my parents house to "babysit" for a year and half-have I mentioned how much I hate moving...going through 3 different trucks (Levi), many many weekend get aways, and lots of 1st experiences together. We decided to go on a CRUISE!! Levi had never been on one, and really, cruises are the best way to go. 1 fee, that's all!! Well for the most part...

We went on the Carnival Sensation Cruise down to the Bahamas. It was a 4 day, 3 night. So very fun!!! But if we could go back and change 1 thing...it would have been the cruise line. The trip it self was amazing. Food, fabulous. Dancing, out of control crazy. Free Ice Cream 24/7, yes please!!! We can't wait to go on our next cruise. So if you want in, lets start planning now!!!

Formal Night. We both ended up wearing purple, what are the odds? (my belt had a purple flower-see post below- and my tights were as well) I wish I wasn't blurry in my pic...

Mini Golfing on the top of the ship! We played best out of 3. Of course I won! Well...with exception that Levi played left handed the last game.

Well...my husband has done it again!!! He has gone far beyond expectations from what I thought I would ever have in my bestfriend and love of my life!!!

Has anyone else woken up on March 17th to a gift and "pot of gold" waiting for you on your counter from your husband?!

And inside my GREEN present was this adorable belt from Anthro that he picked out all on his own and a bedazzled measuring tape I have had my little eyes on for months from Z Gallerie.
